In my kitchen, from-scratch cooking means preparing as much as possible with whole, fresh ingredients. I avoid pre-made or heavily processed products. By building dishes from the ground up, I protect flavor and maintain quality.
Fresh foods retain more natural nutrients. They experience less nutritional loss than frozen or heavily processed meals. Because of that, residents receive meals that better support overall wellness.
I adapt meals by making thoughtful adjustments, especially with sodium. During preparation, I use minimal salt. Instead, I allow residents to season their meals at the table according to their preferences. This approach supports heart health while respecting individual taste.

When balancing comfort foods with healthier options, I focus on simple substitutions. For example, I use low-fat dairy products and incorporate vegetables into dishes like meatloaf and sauces. These small changes improve nutritional value without altering the familiar flavors residents enjoy.
One resident favorite that reflects this balance is our chili. I prepare it entirely from scratch using ground beef, onion, bell peppers, paprika, cumin, dark chili powder, chili powder, jalapeño, crushed tomatoes, beef stock, salt, pepper, minced garlic, cinnamon, and cocoa powder. The combination creates depth and warmth while maintaining a wholesome foundation.
Scratch cooking takes more time and skill. However, that extra effort makes a difference residents can taste. Freshly prepared meals support wellness, enhance flavor, and create a dining experience that feels personal and comforting.
