Nostalgic Lunchbox Treats

Do you remember the days when the lunch bell rang, signaling the excitement of discovering the treasures hidden in your lunch box? Join me as I take a trip down memory lane, revisiting some items—some I’d rather forget—and the iconic snacks and treats that fueled my childhood adventures and satisfied my youthful cravings.

Growing up, I preferred school-provided lunches because I enjoyed having hot food for lunch. My favorite snack that my mom packed was peanut butter crackers, and they remain my favorite to this day! I often packed my lunch to save money, as it was more affordable to make a quick sandwich.

The strangest thing I saw on the school menu was fish sticks with mustard sauce. The sauce seemed odd to me as a kid. If I could create one school lunch item from scratch, it would be apple pan pizza. My ultimate school lunch menu would include both pan pizza and dessert pizza.

My secret to making the ultimate lunchbox meal is to make it fun and healthy. I try to give my three kids enjoyable packed lunches. Packing school lunches and meal prepping as an adult are similar; you need to put care into what you’re making rather than just throwing things into a box. The more excited you are about the meal, the better it will be. To ensure a well-balanced and nutritious meal, include protein, a vegetable snack, and something sweet.

For a breakfast box, I’d like to see cold oats with berries and honey, along with a protein shake and a banana.

Even though we’ve traded our lunch boxes for grown-up alternatives and our tastes have evolved, the nostalgia of those beloved treats still reminds us of the innocence and delight of youth.
